Pan Fried Oysters with Green Apple and Avocado Sauce

I love oysters, especially when they are pan fried! This is a very easy recipe and guests will be wowed at the complexity of the flavors. We have the taste of the sea, along with the tanginess of the apple and creaminess of the avocado.

Pan Fried Oysters with Green Apple and Avocado Sauce


Servings: 4-6

Prep Time: 25 minutes

Cook Time: 10 minutes


Ingredients:

For Oysters

1/2 cup of milk

1 pint oysters (12-16 oysters), cleaned and shucked

3/4 cup all-purpose flour 3/4 cup panko bread crumbs

1 teaspoons fresh parsley, chopped

1/2 teaspoon fresh oregano, chopped

1/4 teaspoon cayenne pepper 1/2 teaspoon paprika

2 cloves garlic, minced

3 eggs

2 teaspoons hot sauce

6 tablespoons grape seed oil


For Green Apple and Avocado Sauce

1 green apple, cut up

1/2 large avocado, cut up

1⁄2 of a squeezed fresh lime

1 teaspoon light olive oil

1 1/2 teaspoons minced shallot

1 teaspoon diced red pepper

1 1/2 teaspoons minced parsley

1/2 teaspoon Dijon mustard

Salt and pepper to taste

1 tablespoon micro greens for garnish


Directions:

Soak oysters in milk while mixing panko with the parsley, oregano, cayenne pepper, paprika and garlic.


Set 3 small bowls. Place flour in one bowl. In the second bowl whisk 6 eggs and hot sauce. In the third bowl panko mix. First dip the oysters in flour, then the egg and coat in the panko mixture. Coat completely. Pace the dredged oysters on a cookie sheet and place in refrigerator for 10 minutes.


While oysters are in refrigerator, start the green apple and avocado sauce.


Place the apple pieces in a blender to puree. Add avocado pieces and lime juice and blend. Then add minced shallot, 1/2 teaspoon diced red pepper and parsley. Pulse until well blended. Slowly add olive oil, pulsing, until you reach desired consistency. Remove to a bowl and stir in mustard. Add salt and pepper to taste.


Heat oil in skillet until hot. Add oysters to the oil in batches.


Brown lightly 1 to 1 1⁄2 minutes on each side. Drain on paper towels. In appetizer serving spoons or small dishes, place some green apple and avocado sauce to the bottom. On top of sauce place an oyster. Garnish with remaining red pepper and micro greens.
